A local inspiration. A food lover. A health nut. The creater of the most delicious summer treat I have ever encountered!<br /><br />During my stroll through the park this afternoon, I decided to take another trip to the Wednesday afternoon farmer's market (that's 2 trips this week!). It was there that I encountered DavePops and his cute little popsicle stand. When I think of popsicles I think about how they are an iconic symbol of childhood. They leave your taste buds with a true feeling of nostaligia. From otter pops and push pops to twin pops and cream-sicles, for me, the memories of eating them, enjoying them, and letting them melt all over your play clothes are just as nostaligic as the Cabbage Patch Kids, New Kids on the Block, and Goonies.<br /><br />When first approaching his cute little stand, I was immediately captured by the colorful rainbow umbrella above his freezer stand, Dave's long hair and great big mustache, and the huge smiles of people walking away and licking the sides of their newly acquired frozen treat. Dave himself was friendly, jubilant, and had an undeniable love and passion for his pops. All of his pops are handmade and organic. His DavePops were unbelieveably creamy and smooth in texture yet subltly sweet and succulent in taste. I had the lemon lime DavePop which was creamier than an ice cream sundae! I had to inquire about his secret and he responded with one word: Pectin. This is an all natural ingredient found in fruits like bananas. Hence the reason why the addition of frozen bananas make smooothies so smooth and creamy! All DavePops have simple wholesome ingredients that include whole fruit, soy milk or water based juices/pops, pectin, and sugar. A simple recipe for a simple and delicious treat!<br /><br />He also developed LukePops, named after his nephew who recently developed Diabetes. All LukePops are sugar free and are instead made with splenda. The sound of people haggling vendors for a good price on a pound of white capped mushrooms or bunch of basil gets me so excited I can hardly contain myself. My eyes widen as I am mesmerized by the colorful array of fresh produce spread out on a table ready to be bought, sauteed, and devoured! The entire experience just tickles my fancy. So good that haggling is a useless skill! Even as you walk away with a 3lb bag of red onions and 2lb bag of Chinese Broccoli, you'll think "How in the world did I just walk away with all this produce for only $2? How do these people make any profit?" I learned that the best way to go about it is to not ask questions. Just accept a cheap deal. And if you are there at the tail end of the morning, the already good deals get even better as the vendors just want to get rid of what they have and call it a day! So, shhhhh! Instead of making this classic dish with pancetta, I decided to cater the main ingredient of this dish to the guests who were in attendance. A large group of bulky ex-college wrestlers AKA bacon lovers! The dish was a hit and even after I made two huge heaping servings the insatiated party guests wanted more. It's filling, savory, smokey, meaty, cheesy, rich, creamy, and extremely simple to make! While living in Florence I found this dish to be a classic Italian staple...eaten any time of the day and served up in almost any Italian trattoria. I even had the pleasure of making this dish for our Parisian couchsurfing hosts David and Vladia while my sister and I were traveling through France last summer. They loved it! The greatest thing about this dish is that no matter what country you are in the ingredients are all very basic and simple...and easy to find! I substituted parsley with basil while in Paris. Either will do!<br /><br /><br />Hickory Smoked Bacon Pasta Carbonara<br /><br />8oz Hickory Smoked Bacon (chopped)<br />2 cups heavy cream<br />salt & pepper<br />2 eggs<br />2 cups freshly grated Parmesano Reggiano<br />chopped parsley<br />2 cloves garlic (chopped)<br />1 lb. fettuccine<br /><br />1. Cut the bacon into 1cm strips and fry over a medium heat. Add garlic and stir fry with bacon for a minute.<br />2. Place the fettuccine into a pot of salted, boiling water and cook until al dente<br />3. In the mean time, once the bacon is cooked add the cream and salt and pepper to the pan and simmer to reduce until thick and creamy.<br />4. Whisk together the egg and Parmesan<br />5. Once the pasta is cooked, drain and add it to the pan and stir it through the cream sauce.<br />6. Finally, add the egg and Parmesan to the pan and stir again.<br />7. Sounds cheesy but it's <span class="blsp-spelling-error" id="SPELLING_ERROR_0">soo</span> true! After successfully executing Frank's M&M and Kit Kat colorful and delicious birthday cake, I was so confident going into making a delicious carrot cake for my best friend Jeremiah's 33rd surprise birthday! And this is what happens when you get a little too confident and foolishly "clever". Baking, I must say is a new enterprise to me. In so many ways it is such a science and a bitch to figure out, however, it many ways with my sweet tooth I really do love getting elbow deep in flour, using my sweet red kitchen aid to make sweet doughs that are accompanied by sweet aromas which fill my small little apartment, and most of all: adding and subtracting and substituting parts of the recipe to my liking!<br /><br />This two layered carrot cake was going to be the king of all carrot cakes and I was even going to attempt to make some mini carrots and a frog out of fondant. Boy was this a major endeavor in only having 5 hours to complete it! I used a well trusted food blog <a href="http://culinography.wordpress.com/2010/01/19/my-favorite-carrot-cake/">"Real Life Foodie Adventures"</a> who posted a recipe that has been passed down through the generations and been perfected over many years. I thought I might as well try it and liked that there were substitutions in this recipe that make the cake unique and healthier. These include the addition of diced pineapple and applesauce! These keep the cake <span class="blsp-spelling-error" id="SPELLING_ERROR_1">uber</span> moist and delicate.<br /><br />So I decided to get smart with the recipe and with limited time, decided to pour the entirety of the batter into one large spring form cake pan. I decided that I could bake it, cut it neatly in half, and icing the two layers after they have been cooled. BIG MISTAKE. In an effort to save time, I turned what was supposed to be an <span class="blsp-spelling-error" id="SPELLING_ERROR_2">alotted</span> 3 hour window of time to turn my cake baking fiasco into 6 hours and <span class="blsp-spelling-error" id="SPELLING_ERROR_3">alotta</span> frustration. I baked the cake at the recommended time and temperature however, no matter how long I baked it the middle always came out doughy (with my toothpick test). The longer I put it in the oven, the outside became darker and harder while the middle remained doughy. I should have gone with my original instinct to pour the cake batter into two <span class="blsp-spelling-corrected" id="SPELLING_ERROR_4">separate</span> cake pans to allow for evenly distributed heat and a fully cooked cake. <span class="blsp-spelling-error" id="SPELLING_ERROR_5">Argggghhh</span>...<br /><br />Now that time was no longer on my side I had to think fast. I decided to scoop out the raw dough from the middle of my partially baked cake and make mini carrot cakes. Hence, the way this "twice baked carrot cake" got it's name. I took my melon <span class="blsp-spelling-error" id="SPELLING_ERROR_6">baller</span> and scooped away into my mini bite sized cupcake pan and continued to bake until my toothpick came out clean. I used the cream cheese frosting from the recipe but added a little vanilla bean to give it some extra flavor pizazz and <span class="blsp-spelling-error" id="SPELLING_ERROR_7">hoorah</span>. I used my ever-so-loved frosting piping bag to pipe a nice swirl of frosting on each cupcake. I decided to top each mini cake with a candied pecan that I bought in the peanut aisle. You wouldn't believe that candied pecans costs about half as much as buying raw pecans! I got the "pecan flavor" of whole candied pecans and I was worried about how these might take away from the flavors of the cake itself but they were a great and most delicious addition!<br /><br />So some quick thinking turned a mess of a mistake into 33 little bite sized and delicious twice baked carrot cake! Exactly 33. One for each year of the birthday boy. A candle in each. One hard huff and puff of all the candles. And there you go! We've all been there! Too lazy to find a new recipe, drive to the store, etc etc. Some of the most amazing food I've ever had has resulted from an impromptu meal made from random things in my refrigerator! Like my chicken, mozzarella, and heirloom tomato pesto <span class="blsp-spelling-error" id="SPELLING_ERROR_0">nann</span> bread <span class="blsp-spelling-error" id="SPELLING_ERROR_1">panini</span>? To die for! <div><br />Here is the recipe for my "sweet random pie" could also be known as "Jasmine's chocolate caramel pecan pie". It's super simple, easy, fast, and Delish! What more could a chef ask for?<br /><div><br /></div><div><b>Sweet Random Pie</b></div><div><br /></div><div>Pie Filling:</div><div>8oz. semi-sweet chocolate chips</div><div>1 Cup brown sugar</div><div>1 Cup Unsalted Butter</div><div>1 Cup whole pecans</div><div><br /></div><div>Pie Crust:</div><div><br /></div><div>3/4 Cup unsalted butter, room temperature</div><div>1 large egg, lightly beaten</div><div>1/2 Cup granulated sugar</div><div>2 Cups cake flour</div><div><br /></div><div><br /></div><div>To make the crust, in a large bowl, use a wooden spoon (or Kitchen Aid Mixer) to combine the butter, egg, and granulated sugar. Add the flour and mix until a <span class="blsp-spelling-corrected" id="SPELLING_ERROR_2">homogeneous</span> lump of dough forms. Roll into a ball, cover in plastic wrap, and refrigerate at least 2 hours or up to 8 hours.</div><div>Preheat oven to 400 degrees F. Butter a 9 1/2 inch tart pan. Unwrap refrigerated dough and place on a floured work surface. Lightly flour rolling pin, roll dough out into a round. Line crust into greased tart pan. (This tart in particular is my favorite because it's taste and texture reminds me of a shortbread cookie--my favorite!). Bake pie in oven for about 30 minutes until pale dry.</div><div><br /></div><div>Sprinkle chocolate chips right on top of pie crust. Spread around evenly. Place in oven for 2 minutes or until chocolate has completely melted. Spread melted chocolate with a spatula into an even layer. </div><div><br /></div><div>In a small pot melt butter and brown sugar and mix together on medium heat. Mix until thoroughly combined and let boil for 3 minutes. Pour caramel mixture from pot into pie tart pan over chocolate and spread. Allow yourself to make beautiful swirls with the caramel and chocolate mixture. Top with pecan nuts (whole or chopped). </div><div><br /></div><div>Allow to cool until warm to touch and serve warm with a large <span class="blsp-spelling-corrected" id="SPELLING_ERROR_3">dollop</span> of vanilla bean <span class="blsp-spelling-error" id="SPELLING_ERROR_4">gelato</span> (or whatever choice of ice cream you want!). For garnish top with mint leaf.</div><div><br /></div><div>Enjoy to the fullest! If you think that the pie filling is too sweet you may always opt for using milk chocolate chips. I brought the pie over to a friend's place and needless to say the pie tart pan was the only thing I came home with! By luck I found this recipe on <a href="http://tastespotting.com">Tastespotting</a>, my go-to site for all wonderful recipes networked by other food blog enthusiasts and also what I like to refer to as "food porn". If you are one to feast with your eyes (which we all do to some degree) this would be the site to check out. There's also a search box where you can type in any recipe ingredient to filter out all recipes that include that ingredient! This is perfect for left over ingredients in your fridge or when trying to find what to make for the produce you found on sale but have no clue as to what you might make with it. The only thing better than checking out this site is actually eating the food itself! Maybe one day I might make a fortune for inventing taste-a-blog...forget smell-a-vision! Taste-a-blog is the future!<br /><br />Linda Balsev, the author of the food blog <a href="http://www.tastefoodblog.com/tastefood/2010/01/more-easy-weekend-baking-ginger-spiced-molasses-cookies.html">"Taste Food"</a> posted this recipe and by chance, I found it among 20 other ginger molasses cookie recipes. I discovered these cookies to be wonderfully textured and had the most delicious blend and balance of spices. Thick, chewy & crumbly at the same time, each cookie turned out perfect in size, texture, and flavor! In order to get each cookie consistent in size, I recommend using a <a href="http://www.google.com/products/catalog?hl=en&source=hp&q=ice+cream+scooper+spring&oq=&um=1&ie=UTF-8&cid=15424972591230088312&ei=6VyQS-bfNoiyNquYsZAN&sa=X&oi=product_catalog_result&ct=result&resnum=3&ved=0CBcQ8wIwAg#ps-sellers">2 oz. stainless steel spring loaded ice cream scooper</a> before balling the portioned dough in your hand and rolling them in a powdery bath of sugar.<br /><br />I am still exploring the baking world, one cookie, cake, and pie at a time! We ended our delicious endeavor with a wonderful simple fruit tart ala mode. Our tart crust was extremely simple and resembled a buttery flaky shortbread cookie. A little flour, butter, sugar, and eggs, and wallah! We had a decadent pie crust. Our recipe is just too great to publicize. Afterall every great chef has their share of secret recipes that we shall take to the grave, right?! I brushed the perimeter of the crust with simple egg white so they would turn a beautiful golden brown in the oven. Bananas and rasberries (you can use whatever fruit happens to be on sale at the store or farmer's market) were our pick of fruit as one may use almost any fruit to top this tart. We sliced bananas very thin and and layered them right on top of the crust. Most fruit tarts have a sort of custard layer between the crust and fruit however the banana added a great consistency and tied the different layers together very well, thus no need for a custard. I've never been a real big fan of custards anyway. Then we topped the banana with rasberries and sprinkled powdered sugar on top for added bite of sweetness and a beautiful snow powdery finish! We sliced the cake as it was still warm out of the oven and accompanied each plate with a nice sized dallop of french vanilla ice cream! I wish we could say the ice cream was homemade but that's another endeavor for another day! The only thing I think we could have done differently was to bake the crust with a weight (bag of unbaked beans or something) to keep the surface of the crust flat before plating the fruit. I made the exact same fruit tart a few days later (I was on a fruit tart frenzy for a week) but used blueberries instead of rasberries. The only downside I noticed were that the blueberries tended to roll around everywhere. On the plate, off the plate, off the table, and onto the floor when serving! This immediately reminded me of an old childhood song "On Top of Spaghetti". This is when I think a layer of custard would be useful to act as the glue to keep the smooth rolly polly blueberries in place! Perhaps a banana infused custard? I also think these tarts would be a wonderful delight as small little bite sized tarts. Sweet, simple, and delicate for a lady's afternoon tea or perhaps even a baby shower. It has been one crazy month as so much has happened! To start, I was recently laid off from my job but before you start to have pity, I must say it is a true blessing in disguise! The timing could not have been any better as I now have time and energy to devote all my time to Delish, a company I believe in full-heartedly.<br /></div><br />I am currently collaborating with all my contacts in regards to Delish and going full force into establishing our name in the community and expanding! I'm making it a full-time effort and so far it seems that these efforts have been paying off! Our website is in the last stages of being complete and our good friends and family have been great referrals for hosting future events! Kim and I have been working our our business plan to identify our goals, vision, target market, costs, expenditures, profit margin, etc. All that business stuff is an absolute necessity as we cannot afford NOT to have all the research and business plan in place! We are also an official sponsor of the Sacramento Midtown Triathlon Club and have been catering monthly board meetings and other social events.<br /><br />This month we are planning to film a commercial for our website, collaborate with a local comedy club to cater a benefit comedy show for a friend and donate sample tastings to local radio stations and community television stations for a few seconds of air time. Kim and I are also making efforts to continue learning new skills/techniques/recipes/flavors by enrolling in cooking classes at William Sonoma and Sac Foods Coop. As longs as we are business we will never stop learning, practicing, and perfecting new and old favorite recipes. I have recently stumbled upon a creation that will surely be apart of the regular rotation, the one we undeniably all have.<i>Spicy Garlic Shrimp with Parmesan Rice</i>. Pure bliss. What you are about to experience is certain to deliver complete joy and satisfaction.<div><br /></div><div>Recipe:</div><div><div>1 c. brown basmati rice</div><div>2 c. water</div><div>Pinch of salt</div><div>Parmesan cheese</div><div>3 cloves garlic</div><div>½ lb. shrimp (fresh or frozen is fine)</div><div>Sriracha sauce</div><div>Fresh lime juice, about ½ lime</div><div>Chopped fresh Cilantro</div><div><br /></div><div>Cook rice according to directions, adding a pinch of salt in the beginning of cooking process. Stir in 1 tablespoon of butter, freshly grated parmesan cheese and a pinch of salt and pepper once rice is fully cooked.</div><div><br /></div><div>Heat a large skillet or wok over medium-high heat. In 2 tablespoons of olive oil, lightly sautee the garlic, about 2 minutes. Add the shrimp and toss to coat. Add sriracha sauce (about 1-2 teaspoons, or more to taste) and lime juice. Cook for 2-3 minutes, or until shrimp is done and warmed through. Remove the shrimp using a slotted spoon and spoon on top of rice. I still can't get over how delicious these little balls of cabbage turned out! I think I would have honestly made peter rabbit or the Easter bunny very proud! The dang things are in season so I thought, eh, what the heck! I bought a nice bag of them and decided to follow my heart when making them. I chopped off the base of each one and peeled off the first layer of leaves. Then I boiled them in water until soft to the touch with a fork. I put them in a sautee pan with butter, ALOT of chopped garlic, and a little salt/pepper to taste and WALLAH! A magical, buttery, soft creation emerged from my sautee pan! Perfectly paired with a glass of Guwersthmeiner white wine and some rotisserie chicken and you've got a complete meal! Very easy and simple veggie dish to whip up on any week night after a looong day at work! I also heard that they are amazing paired with some chopped bacon as well! MMMM...my mouth is watering just thinking about it! But then again, in what situation is bacon NOT a welcome addition to a dish? I heard that it can even work on ice cream! Don't be afraid of the intimidating little cabbage balls and try it! Here it goes. Kim and I are ecstatic to announce the grand opening of our small boutique catering business! Named after none other than this wonderful blog, Delish! We are so excited that our passion for making wonderful food and making people happy is actually coming to light and becoming a professional business! So we are the "Delish Boutique Catering" specializing in hosting small intimate events. Whether it's black tie formal or casual, indoors or outdoors, italian themed or asian, we would LOVE to host YOUR event! Right now we are hosting events for free just to experiment and get our name out there.<br />

We are confirmed to host our FIRST event on Jan. 23rd for a friend's housewarming party and are already going to be having a special private tasting for a few lucky family members and friends this weekend. For now all of our services are free and all we require is that the cost of food be covered. This is something that both Kim and I have always dreamed of and it is finally becoming a reality! This blog will continue through our process of getting all this started and of course all of our favorite recipes and finds will be blogged upon. We hope that our love for beautifully presented and mouthwatering food and people will manifest in our business. We want to base our company philosopy on healthy, organic, locally grown, modern, simple, tasty, fresh, foods that really show that we have put our heart and soul into making. Kim and I as partners work really great as we are different and compliment each other in so many ways yet we are similar enough and seem to be right on the same page. We a pretty incredible partnership!<br />

We are getting all our fancy serving platters together, our best signature appetizer and dessert recipes on the menu, and looking into making some investments at the Restaurant Supply Store! We also have a website that is in the works. We also have a wonderfully talented and creative graphic designer who will be helping us out in designing a logo and getting some business cards, feedback cards, and stationary made! Not only that, my friend who is also a hand sketch artist is drawing some sketches of Kim and I and so far they're really great! He really understands our concept and how we want our design concept and company to come through. Whew! It really looks like it's all coming together. Now its all about keeping our focus, executing a great food at some events and hopefully news of Delish will spread like wildfire!<br />

So you're probably wondering, "Meatiest meatless salad?..hm...", well well my friends, here it goes! It all started with a bottle of champagne dressing. Introduced to me by none other than my best friend Kym (must credit her for that!). I love adapting little things from my wonderful friends and making them into my own as much as possible. So here goes my meaty meatless salad...guaranteed to make your bellies and your heart smile. Best eaten after a hard session of hot yoga or long run. Enjoy and thank you for allowing me to share my passion with you...<br /><br />Champagne Beet Salad:<br /><br />All ingredients can be found at Trader Joes!<br /><br />Freshly packaged beets (found in the refrigerated section @ TJ's next to the spring mix salad)<br />1-2 Avocados (depending on how much u love avocados)<br />1 Bag of Spring Mix Salad<br />1 Handful of Candied Pecans or Walnuts (found in the nut section of TJ's)<br />1 container of crumbled goat cheese 4 oz, (cheese section of TJ's, also very affordable here!)<br />4 Tblsp. of Girard's Champagne Vinagrette Dressing (Safeway, dressing aisle)<br /><br />Slice beets and avocado to bite sized pieces,<br />Toss and mix together.<br />Use dressing sparingly, a little goes a long way!<br />Try to place a little of each ingredient on a fork for your first bite and notice how all the flavors, textures, and aromas meld together on your tongue so lovingly! So naturally, I was first in line when the new KitchenAid pasta extractor attachment was introduced, and it was love at first bite. I have always preferred homemade pasta dough to store-bought, however tend to tire of the typical lasagna sheets, ravioli, and spaghetti. And of the work involved. Not an enticing idea at 7:30 pm when you are tired and hungry, and a glass of red wine with a delicious warm pasta dish is all you can think about. What I discovered was not only an exciting and fun way to galavant around kitchen, but how incredibly easy it was. I mean EASY. Dough - check. Pasta extractor - check. Fresh and delicious pasta -Yum!</div><div><br /></div><div style="text-align: left;">I have since (through trial and error) made significant progress in mastering the art of homemade Fusili. The first couple of attempts provided nothing worth reporting, nor remembering. Long pieces of scored dough desperately trying to resemble the short, spiral pasta shape we all love. Tonight - a success. I have found the trick is getting the dough to the exact consistency and temperature, with the right speed on the mixer, all while knowing the first handful of pass-throughs will be sent through again; as for some reason it takes this amazing gadget a few minutes to "warm up". However, with a little optimism and a glass (or two) of wine, this test of patience proves to be well worth it. On the menu: Herbed Pasta with Chicken and Asparagus. (You'll notice the martini glass peeking through the photo {"Not wine" you ask!?!} This will be addressed down the road as my current challenge: mastering a Dirty Pickle Martini. As such, wine was had).</div><div style="text-align: left;"><br /></div><div style="text-align: left;">Now, I'm aware that many of you may not own this amazing contraption, and are asking yourselves this very logical question: "How I am supposed to recreate without this...?" The answer is simple. You don't. You need this. Or you need to come over to enjoy it. Either way, it's a necessity. A necessity not taken lightly.</div><div style="text-align: left;"><br /></div><div style="text-align: left;">So - I suppose the point of this entry is to merely to share with you what I have found, in a shy attempt to convince you this homemade pasta is not only more delicious and inexpensive than conventional pasta from the store, but an experience in the kitchen, providing countless evenings of entertainment for you and those you share your kitchen with. Bon Apetit!</div><div style="text-align: left;"><br /></div><div style="text-align: left;">~Kimberly</div><div style="text-align: left;"><br /></div><div><div style="text-align: left;"><b>Recipe:</b></div><div><div style="text-align: justify; "><div style="text-align: left;">Ingredients:</div><div style="text-align: left;">I recipe homemade egg noodle fusili pasta; recipe below (added: 1 egg, 1 c flour)</div><div style="text-align: left;">I bunch (or approx. 12 med. Asparagus stalks); cut into 1” pieces</div><div style="text-align: left;">3 cloves garlic</div><div style="text-align: left;">1 shallot</div><div style="text-align: left;">2 T chopped fresh thyme</div><div style="text-align: left;">2 T shopped fresh sage</div><div style="text-align: left;">Juice of ½ lemon</div><div style="text-align: left;">2 T butter</div><div style="text-align: left;">1/3 c extra virgin olive oil</div><div style="text-align: left;">2 T chopped fresh parsley</div><div style="text-align: left;">Zest of one lemon</div><div style="text-align: left;">2 chicken breasts; cut into small strips and grilled separately (generously sprinkled with salt and pepper)</div><div style="text-align: left;">Salt and pepper to taste</div><div style="text-align: left;"><br /></div><div style="text-align: left;">Prepare pasta dough according to directions.</div><div style="text-align: left;"><br /></div><div style="text-align: left;">In a large wok or skillet lightly saute the garlic and shallot and salt in olive oil and butter. (Approx 3-5 minutes) Add freshly ground black pepper, to taste. (advise 7-10 turns w/ grinder). Add the asparagus and toss to coat in the mixture. Cover for 2-3 minutes to lightly steam. Add the cooked chicken, thyme and sage. Stir to combine. Add the cooked pasta and stir to combine once again. Let sit in the warm pan about 2-3 minutes, stirring occasionally to keep well combined and consistently warm. Divide amongst pasta bowls and garnish with a pinch each of parmesan cheese, parsley, and lemon zest. Serve immediately.</div><div style="text-align: left;"><br /></div><div style="text-align: left;">***Vegetarian / Optional Add-Ins***</div><div style="text-align: left;">Tofu, sliced almonds or pine nuts, crimini mushrooms (quarter and sautee these with the asparagus), grilled shrimp.</div><div style="text-align: left;"><br /></div><div style="text-align: left;">Basic Egg Noodle Pasta recipe from KitchenAid:</div><div style="text-align: left;">4 large eggs (I added 1 additional egg for this recipe, totaling 5)</div><div style="text-align: left;">3 ½ c. all purpose flour </div><div style="text-align: left;">(added additional 1 cup, totaling 4 ½ c. I also use a multi-grain flour blend for better nutrition. )</div><div style="text-align: left;">1 T warm water</div><div style="text-align: left;">1 tsp. salt</div><div style="text-align: left;"><br /></div><div style="text-align: left;"> Place flour and salt in stand mixer bowl. Attach bowl and flat beater. Turn to Speed 2 and gradually add eggs and water. Mix for 30 seconds. Stop mixer and exchange flat beater for dough hook. Turn to Speed 2 and knead for 2 minutes. Remove mixture from bowl and place on clean surface. Dough may appear brumbly. Hand knead for 30 seconds to 1 minute, or until dough is smooth, pliable, and holds together in a ball. For those of you who know me best, I'm a total grease-a-phob and frequently eat pizza with knife and fork so I don't get grease on my hands. BUT, I decided to try this and successfully made green onion goat cheese wontons for a company poker party one weekend and they were a BIG HIT! I don't like burgers but I LOVE a good slider. Scones are overwhelmingly sweet and heavy but when Starbucks has 3 mini vanilla scones for $1.95, I'm all over it! Its not like eating bite sized foods means eating any less because when served or prepared it's usually in the form of a trio, but I love it! These come in an assortment from spinach to bacon and cheese and are just to DIE for! My parents are known to be Costco "whores" and have always served these up at all family holiday get togethers. Honestly, what can be better than bite-sized breakfast in a flaky crust!? Okay, so I know that I could be the national spokesperson for this place but upon the first bite of this incredible find, I was in heaven! I was sitting in front of my computer at work totally in need of a pick-me-up when I decided to whip this out....I was so excited about how amazing this tasted that I got up and literally started doing jumping jacks while yelling "omg...I love this stuff!" over and over again! Not to say that I'm the best baker in the world as I've had many failed attempts at baking what I think will turn out to be the best thing anyone's ever tasted. Baking, unlike cooking to me, is a hard, objective, detail-oriented science, one that I sometimes don't always have the patience for. But I do have days when I wanna get it perfect and use the creative part of my mind that has been all too often neglected in the world of work, errands, sleep, repeat. I am bound to NOT make life about filling everyday with those THINGS and always maintain a creative outlet. Kinda like this blog. So here goes nothing.<br /><br />So I was given the task to make cupcakes at my best friend's second baby shower very last minute. The theme of the shower was Sunflowers, a very unique and summery theme that isn't too stereotypically baby girl-esque. Love it! So I went totally literal and decided to forgo trying to create an awesome cake/frosting recipe this time and spend all my energy and time into creating Sunflower cupcakes--focusing on the presentation and decor rather than homemade chemical concoctions of what might end up tasting like delicious cake or might end up being bit into and spat out almost immediately.<br /><br />I used basic Duncan Hines yellow or chocolate boxed cake. I know, I'm such a fraud! I also used store bought frosting but I used Duncan Hines whipped white frosting. This way I could color the frosting whatever colors I wanted. I also used yellow and green food dye for the flower petals and leaves. I got the idea to used crushed oreo cookie for the center of each sunflower then proceeded to decorate around them. It helps to skin a small circular portion of the top center of the cupcake so that when you sprinkle the crushed oreo cookie, the crumbs adhere better. It also works better if you remove the frosting of the oreo prior to crushing or you'll get these white clumps that mess with the texture.<br /><br />I created homemade frosting piping bags by using large zip lock bags and cutting a V shaped whole on one bottom corner of the bag. This gave me the ability to make very detailed petal and leaf like frosting designs on these mini works of art. I piped 4 green leaves equally spaced apart in each quadrant of the circular cakes. Then I piped yellow petals overlapping the leaves on the circumfrence of the oreo cookie center. Let me know what you think! This is a very tedious and time-consuming project and after getting carpal tunnel and straining my eyes out in one night, it should be obvious that I made each one with alot of love and care.
