Spicy Garlic Shrimp with Parmesan Rice


So it's been a little while since I last blogged, and to our loyal followers I apologize - however I am hopeful it was worth the wait! I have recently stumbled upon a creation that will surely be apart of the regular rotation, the one we undeniably all have.Spicy Garlic Shrimp with Parmesan Rice. Pure bliss. What you are about to experience is certain to deliver complete joy and satisfaction.

Recipe:
1 c. brown basmati rice
2 c. water
Pinch of salt
Parmesan cheese
3 cloves garlic
½ lb. shrimp (fresh or frozen is fine)
Sriracha sauce
Fresh lime juice, about ½ lime
Chopped fresh Cilantro

Cook rice according to directions, adding a pinch of salt in the beginning of cooking process. Stir in 1 tablespoon of butter, freshly grated parmesan cheese and a pinch of salt and pepper once rice is fully cooked.

Heat a large skillet or wok over medium-high heat. In 2 tablespoons of olive oil, lightly sautee the garlic, about 2 minutes. Add the shrimp and toss to coat. Add sriracha sauce (about 1-2 teaspoons, or more to taste) and lime juice. Cook for 2-3 minutes, or until shrimp is done and warmed through. Remove the shrimp using a slotted spoon and spoon on top of rice. Sprinkle with approx. 2 tablespoons chopped cilantro.
